1.Keto Vegetarian Zucchini Lasagna

Ingredients:
2 medium zucchinis, sliced
200g of ricotta cheese
100g of shredded mozzarella cheese
50g of grated Parmesan cheese
1 cup of spinach, chopped
1/2 cup of marinara sauce (sugar-free)
1 tablespoon of olive oil
1 teaspoon of dried oregano
Salt to taste
Pepper to taste
Kitchen Tools Needed:
Oven
Baking dish
Knife
Chopping board
Saucepan
Instructions:
Preheat the oven to 375°F (190°C).
In a skillet, heat olive oil over medium heat and sauté the spinach until wilted. Set aside.
In a mixing bowl, combine ricotta cheese, half of the mozzarella cheese, Parmesan cheese, dried oregano, salt, and pepper. Mix well.
In a baking dish, spread a layer of marinara sauce on the bottom.
Layer half of the zucchini slices over the sauce, followed by half of the ricotta mixture and half of the spinach. Repeat the layering, finishing with the remaining marinara sauce on top.
Sprinkle the remaining mozzarella cheese on top.
Cover the dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes until the cheese is bubbling and golden.
Let it cool for a few minutes before serving.
